The Brix scale is used in the food industry to measure the average amount of sugar in fruits, vegetables, juices, wine, and soft drinks. A 25°Bx solution (25% w/w) means 25 grams of sucrose in 100 grams of liquid. Or, in other words, 100 grams of solution contains 25 grams of sucrose and 75 grams of water.
Before use, ensure the hydrometer and cylinder (or other vessel) are completely clean. Fill the cylinder (or other vessel) with the liquid to be tested. Immerse the hydrometer in the liquid, rotating it slightly to remove any air bubbles on the walls of the hydrometer, which could affect the accuracy of the readings. Ensure the hydrometer floats freely, without touching the sides of the vessel. Once the hydrometer has stabilized, read the reading from its scale. The reading should be taken along the lower edge of the meniscus (see figure). All measurements should be taken at a liquid temperature of +20°C (the scale calibration temperature). If the liquid temperature is higher, use the correction table.
